Like “wacky cake” from the wartime era, this cost-effective recipe for wacky blueberry muffins can be made with just inexpensive pantry ingredients – and some blueberries, of course! That said, you can swap in other berries or even chocolate chips, if desired. Note that these muffins are a touch denser than bakery-style, but should still rise nicely.

Wacky Blueberry Muffins (Naturally Vegan)

- Preheat your oven to 400ºF and line 8 muffin wells with cupcake liners.
- Whisk the flour, sugar, baking powder and salt together in a mixing bowl. Add 3/4 cup milk beverage and the oil. Stir until just combined; do not overmix. If you are at higher altitude or in a dry climate, you may need to increase the milk beverage to 1 cup. Fold in the blueberries.
- Pour the batter into baking cups and bake for 20 to 25 minutes, or until lightly golden on top and a toothpick inserted into the center of a muffin comes out crumb-free.

In the recipe you mention a “vanilla dairy free” drink. What on earth is that? I’m lucky if Aldi’s has any oat milk at all.
At times we have no milk, and no oat milk. Can’t I just use water?
We can’t go food shopping every week, so I struggle to find recipes where we can use water as the liquid substitute.
Many brands of dairy free milk alternatives come in a vanilla variety. I can’t speak for oat milk, since it’s not the type I usually buy, but aldi does have other types of milk alternatives in a vanilla variety. Target and Walmart also have their own brands with vanilla varieties flavors. But if you don’t see a vanilla one at your store or just prefer to buy a plain version, you can add 1/4 teaspoon to a half teaspoon vanilla extract to the recipe. In a pinch you could use water, and add some vanilla extract. Milk alternative just adds a little more richness and tenderness to the muffin batter.
