Can I Use Fresh Turmeric to Make Yellow Rice?
Yes, you can use 1/2 to 1 tablespoon freshly grated turmeric (to taste) in place of the ground turmeric. It works in the recipe as written.
How Can I Reduce the Sodium?
The amount of salt in this recipe does give it full-bodied flavor. But you can reduce it to 3/4 teaspoon or even 1/2 teaspoon. The overall flavor will just be a little more muted. For every 1/4 teaspoon of salt that you omit, you will reduce the sodium per serving by about 150mg.

- Rinse the rice in a fine mesh sieve with cold water until the water runs clear. Drain it completely.
- Heat the oil in a saucepan over medium heat. Add the garlic and sauté for 30 seconds, or just until fragrant. Add the turmeric and black pepper, and sauté for another 30 seconds. Add the rice and sauté for 1 to 3 minutes, or until the rice starts to become more of an opaque white color.
- Stir in the water and salt, and bring the water to a boil. Reduce the heat to low, cover, and simmer for 15 minutes.
- Remove the pan from the heat but leave the lid on (no peaking!). Let it rest for 10 minutes off the heat.
- Remove the lid, fluff the rice with a fork, and serve.
