    A dairy-free bok choy smoothie? Why not! It’s a cruciferous vegetable with a mild, lightly sweet flavor that blends seamlessly into smoothies. It’s far less bitter than kale, but is still high in healthy bone vitamins and minerals, like vitamin K, vitamin A, and calcium. Plus, it melds perfectly with tropical fruit, like the mango, banana, and pineapple in this recipe.

    This recipe was originally shared with us by Sharanya Ram as an entry in a recipe contest that we co-hosted with So Delicious. Her creative blend has become a healthy favorite over the years! But we have updated the recipe and have answers to a few frequently asked questions.

    Ingredient FAQs

    • Bok Choy: Can you taste the bok choy? I don’t think so. It’s a mild vegetable with very little bitterness. In fact, it’s a touch sweet. Paired with bold fruit, it pretty much disappears into the flavor.
    • Fruit: Should I use fresh or frozen fruit? That is really up to you. Use all frozen fruit if you want a thick smoothie, part frozen fruit for a somewhat thick and cool smoothie, or all fresh fruit if you like a very thin, drinkable smoothie.
    • Coconut Milk Beverage: What is coconut milk beverage? It’s the drinkable type of coconut milk sold in large cartons, like almond milk. In a pinch, you can simply use 1/3 cup canned coconut milk + 2/3 cup water.
    • Milk Beverage: Can I use another type? We like coconut in this bok choy smoothie because it melds well with the tropical flavors. But you can substitute whatever plain, vanilla, or unsweetened milk alternative you have on hand.
    • Spirulina: Is spirulina required? Spirulina adds brilliant color and a boost of nutrition. But you can substitute another superfood powder, dairy-free protein powder, or omit it.

    Bok choy adds color and nutrition, but it blends into the flavor of this tropical smoothie with ease. Make sure to wash the bok choy well, as dirt can get trapped between the leaves. Also, you can use frozen fruit if you want a thicker, cooler smoothie.

    Ingredients
      

    • 2 baby bok choy bases cut off
    • 1 cup mango cubes
    • 1 cup plain coconut milk beverage
    • 1 banana
    • ¼ cup pineapple cubes
    • 1 tablespoon spirulina
    • Pinch cinnamon
    • 2 cups water or as needed

    Method
     

    1. Put the bok choy, mango, milk alternative, banana, pineapple, spirulina and cinnamon in your blender and puree until smooth.
    2. Blend in water, as needed, to get your desired consistency.
