There are so many vegan nogs out there that basically taste like sweetened milk alternative. We’re putting the egg back in the nog with this healthy dairy-free eggnog recipe. Unlike most vegan versions, it has a silky consistency, is low in saturated fat, is naturally high in protein, and it simply tastes good. But it’s still a relatively light and very drinkable version!

Dairy-Free Healthy Eggnog

Method
- In a small saucepan, whisk together the soymilk, egg, maple syrup, cinnamon, and nutmeg until emulsified.
- Heat slowly over medium-low to medium heat until the eggnog reaches 180ºF, remove it from the heat before it boils.
- Let it cool for several minutes.
- Divide the eggnog between two cocktail glasses, optionally sprinkle each with a pinch of cinnamon or nutmeg, and serve warm.

- Higher Protein: For an even higher protein option, you can add a tablespoon of your favorite dairy-free protein powder. Once the eggnog is cooked, remove it from the heat and stir in the protein powder. If your protein powder is sweetened, start with less maple syrup. You can always add more!
- Alternate Sweetener: If you want a cleaner taste, you can simply use regular sugar instead of maple syrup. If you need a lower sugar option, you can use all or part sugar-free sweetener. But keep in mind, this swap will affect both the taste and the consistency.
