    Are you looking for a vegetarian meatloaf that’s delicious, nutritious, and dairy-free? Then you have come to the right recipe! This meat-free entree has a tender texture from whole grains, is infused with bell peppers, onions, and garlic, and has richness, texture, and omega 3 fatty acids from hemp seeds!

    • High in Omega 3s: You’ll get about 2000mg of Omega 3 fatty acids from the hemp seeds in just one slice, and another 2000mg or so if you use hemp oil.
    • All Natural: This recipe uses whole grains, vegetables, seeds, and other simple, wholesome ingredients.
    • Fast & Easy: The prep work is minimal to make a loaf that easily feeds a family. You can use leftover cooked rice for even quicker preparation.
    • Tender & Flavorful: Just like any good meatloaf, this recipe has a tender bite and is rich in flavor.

    Key Ingredient Notes & Options

    • Brown Rice: As noted, it’s okay to use leftover rice or to make the rice ahead. You’ll need about 4 1/2 cups of cooked rice.
    • Bell Pepper: You can use any color pepper. Red just makes a nicer color.
    • Onion: A yellow or sweet onion will also work great.
    • Oil: Hemp seed oil will infuse this loaf with a good dose of anti-inflammatory Omega-3 fatty acids. But you can substitute another nutritive oil if you don’t have hemp seed oil.
    • Hemp Seeds: Look for shelled hemp seeds or hemp hearts at your natural food store or online. Hemp seeds are tiny and meld seamlessly into the dairy-free vegetarian meatloaf. They are tender to bite, but have a little pop to them.
    • Basil: This recipe uses a lot of dried basil! If substituting fresh, use about 1/3 cup.

    Also known as a hemp loaf or no-meat loaf, this flavorful, meat-free entree is full of flavor and nutrition. It's spiked with hemp seeds for omega-3s, richness, and a great texture.

    Ingredients
      

    • 1 ½ cups long-grain brown rice
    • 3 cups water
    • 1 red bell pepper chopped
    • 1 white onion chopped
    • ½ cup hemp seed oil or other nutritive oil
    • 1 egg see Vegan Option below
    • 2 cloves garlic chopped
    • 1 ¼ to 2 teaspoons sea salt to taste
    • ½ teaspoon black pepper
    • 1 ½ cups shelled hemp seeds hemp hearts
    • 2 tablespoons dried basil
    • ½ cup ketchup can sub tomato sauce
    • Fresh parsley sprigs or basil optional for garnish

    Method
     

    1. Cook the rice with the 3 cups of water. Let it sit and fluff for 5 to 10 miinutes.
    2. Preheat your oven to 325ºF and grease an 8x4-inch loaf pan.
    3. In a blender, combine the red pepper, onion, oil, egg or egg replacer, garlic, salt, and pepper. Blend on high until mostly smooth, but still slightly chunky.
    4. In a bowl, stir together the rice, hemp seeds, and basil. Add the blender mixture and stir to combine.
    5. Pat the mixture into your prepared loaf pan and evenly cover with the ketchup.
    6. Bake for 1 hour or until cooked through.
    7. Garnish with herbs, if desired.

    Notes

    Vegan Option: Use 3 tablespoons aquafaba in place of the egg. See our Egg Substitute Guide for other options.
    Black Pepper Note: The original recipe uses 2 tablespoons black pepper. That was excessive to us, so we adjusted it down. Feel free to use more!

      I made this delicious recipe tonight. I had just minor modifications. As I had no bell pepper, I added a small quantity of jalapeno pepper. As I had no basil, I used 1 T. of oregano and 1 T of thyme. I am from Memphis, so I used BBQ sauce in lieu of catsup. Family loved it.

          I made this easy recipe for a second time today. I used leftover Basmati rice and once again without basil I used dried thyme and oregano. I added chopped fresh basil from our garden. This time I felt the 2 teaspoons of salt was too generous, and I recommend only 1 teaspoon of sea salt. I had no red pepper, but I could have added chopped up celery. Only thought of that later. I used suggested catsup as a stopping, and it was delicious. Thank you.

      Wonderful recipe! However, the hemp oil should be replaced with another oil that is suitable for heating. Hemp oil must not be heated to avoiding losing its delicate nutrients and converting the EFA’s to unhealthy transfats. Hemp hearts and seeds are more resilient because of their casings.
