    I know what you’re thinking. Breakfast parfaits are just layers of yogurt, granola, and fruit. They can be, but these dairy-free yogurt parfaits have a unique, no bake, crumble-style granola. It’s fast and easy, yet has a positively delicious homemade taste and crunch. Plus, I’ve included dairy-free yogurt recommendations and a range of suggestions for your flavorful layers.

    Dairy-Free Yogurt Parfaits with Easy No Bake Crumble

    One of my favorite treats is still this no bake crumble topping recipe. It’s from the 2nd edition of my flagship book, Go Dairy Free 2nd Edition, and gets lots of mileage when the summer hits. It’s an amazing grain-free crisp topping on fresh summer fruit, and also makes a delicious layer in dairy-free yogurt parfaits. I’ve recently updated this recipe, and have added loads of tips and options to help ensure it gets enjoyed in your kitchen, too!

    We have tested dozens of dairy-free yogurts over the years. You can see our top picks in our Best Dairy-Free Yogurt and Best Dairy-Free Greek Yogurt taste tests. But these are my personal favorites for these dairy-free yogurt parfaits.

    • Cocojune: The Greek-style is insanely thick and dessert-like, but all of their varieties are pretty tasty and are relatively low in sugar.
    • Silk: These are sweet, and more like dessert, but both their soy-based and almond-based lines are delicious.
    • So Delicious: Their unsweetened is my top pick when I want lower sugar and a good price. It’s sold in singles, but also in larger-serve tubs.
    • Homemade Almond Milk Yogurt: My friend Alexa whipped up this delicious recipe that pairs so well in these dairy-free yogurt parfaits.

    More Ingredient FAQs

    • Flour: Do you have a nut-free option? I haven’t tested this recipe specifically without nuts, but I do think oat flour (ground oats) would work. This will make it a bit dryer. You might need to adjust the ingredient ratios up or down a bit. You can also add some un-ground quick oats or whole oats for more texture. I would personally toast the oats in the microwave (30 to 60 seconds) before using to get rid of any “raw oat” taste.
    • Flour: Would other nut flours work? Cashews or hazelnuts should work well! Any pre-ground nut flour you have on hand should also work. They will just each impart their own flavors.
    • Sugar: Can I use another type of sugar? Most granulated sugars should work fine, including sugar-free sweeteners. But they will each impart their own flavor. Liquid sweeteners will change the consistency a bit, so you might need to adjust the ingredient ratios.
    • Fruit: Which fruit do your recommend? Any berries or cut stone fruit are great. See the layer suggestions below the recipe for various ideas.
    • Oil: Do you have a coconut-free option? You can substitute palm oil. You need an oil that sets up firmly when chilled, so other types of oil or buttery spread won’t work well.
    • Vanilla: What is pure vanilla flavoring? It’s real vanilla that’s prepared without alcohol. Extract contains alcohol, but pure flavoring typically uses ingredients like glycerin instead. I just prefer the taste of flavoring in no bake recipes, but you can use vanilla extract, if it’s all you have on hand.

    No granola on hand? This super-easy, scrumptious crumble topping sets up in minutes in the freezer! The ratios of dairy-free yogurt and fruit are merely suggestions. Feel free to increase or decrease the quantities in your parfait layers as desired.

    Ingredients
      

    No Bake Crumble
    • 1 cup almond flour
    • ⅓ cup coconut sugar can sub brown sugar
    • ½ teaspoon ground cinnamon
    • Pinch salt
    • 3 to 4 tablespoons coconut oil see instructions
    • 1 teaspoon pure vanilla flavoring
    • ⅓ cup sliced almonds optional
    Dairy-Free Yogurt Parfait (1 serving)
    • 1 5-ounce dairy-free yogurt
    • ½ cup berries or chopped fruit
    • ¼ cup No Bake Crumble

    Method
     

    No Bake Crumble
    1. Put the almond flour, sugar, cinnamon, and salt in a medium bowl and whisk to combine.
    2. Add the coconut oil and vanilla and whisk until coarse crumbs form. Use 3 tablespoons oil for finer crumbs, 4 tablespoons (1/4 cup) for chunkier, firmer crumbles.
    3. If desired, whisk in the sliced almonds.
    4. Dump the mixture onto parchment paper, spreading it out a bit, and place it in the freezer for about 10 minutes.
    5. Remove the crumble from the freezer and break up any large chunks. Store the mixture in an airtight container or plastic bag in the freezer.
    Dairy-Free Yogurt Parfait
    1. Layer the yogurt, fruit, and crumble in a parfait glass or bowl. I like to finish with the crumble on top.

    Notes

    Almond Flour: You can buy it, but I usually make my own almond flour or almond meal. Simply place almonds in a spice grinder (in batches) or small food processor until very finely ground or mostly powdered.

    More Parfait Layer Suggestions

    • Berries: I love to use a mix of fresh seasonal berries. But if they aren’t in season, you can use frozen berries. I defrost them for 15 to 30 seconds in the microwave, which also releases some delicious juices.
    • Chopped Fruit: These dairy-free yogurt parfaits are particularly delicious with diced apples, peaches, nectarines, and pears. The version pictured is a personal favorite: a fresh peach crisp yogurt parfait.
    • Banana Split: Use the sliced almonds, and layer on sliced bananas for the fruit. Top with a cherry, or chop a few cherries and layer them with the banana. 
    • Berry Coulis: In a small saucepan, cook 1/4 cup raspberries or strawberries, 1 to 2 tablespoons honey, and 1 tablespoon water over medium heat for 3 to 5 minutes. Mash the berries and add more water as needed for your desired consistency. Use in place of fruit or as an extra layer with fresh fruit.
    • Omega Boost: Sprinkle hemp seeds or chia seeds on the dairy-free yogurt, but below the crisp layer.
    • Added Protein: Whisk a little protein powder into your yogurt if not using a Greek-style version already. Use an unsweetened yogurt if your dairy-free protein powder is sweetened and/or flavored.

        You can use quick oats or coarsely ground oats, however, I recommend toasting them first. I haven’t tried this yet with just seeds, but a mix of ground sunflower seed and whole hemp seed kernels might work well. I made a batch with hemp seeds added and it was quite good!
