Dairy-Free S’mores Bars Our Whole Family Loves
Our family loves s’mores and s’mores-inspired treats. My youngest son likes to make s’mores bites at his grandmother’s house by simply dipping large marshmallows into melted chocolate and then into graham cracker crumbs. They served them on toothpicks–very fancy! But a longtime favorite recipe of ours is these dairy-free s’mores bars.

- Graham Crackers: Are graham crackers dairy free? Most brands are made without dairy, but it is important to check the ingredients. I have seen brands that contain whey.
- Buttery Spread: Can I sub coconut oil for the dairy-free butter? You can use coconut oil, it should work fine. But make sure the oil is well emulsified into the melted marshmallows before adding the graham cracker pieces. Also, I would use refined coconut oil if you don’t want any coconut flavor.
- Marshmallows: Should I use large or small marshmallows? The size doesn’t matter too much. Mini marshmallows will melt a little faster, but I often use the large marshmallows.
- Chocolate: What dairy-free chocolate do you use? For these dairy-free s’mores bars, I use Enjoy Life Chocolate Chunks. They’re allergy-friendly and my whole family loves them.
- Chocolate: Can I use chocolate chips instead? Of course! If you have some chocolate chips on hand to use up – whether semi-sweet, dark, or dairy-free ‘milk’ chocolate, they should be great.

Method
- Break the graham crackers into bite-sized pieces.
- Melt the buttery spread or margarine in a large saucepan over medium-low heat.
- Add the marshmallows and stir constantly until melted.
- Remove from the heat.
- Stir in the broken graham crackers.
- Gently mix until the cracker pieces are evenly coated.
- Spread the mixture into a lightly greased 9 x 13-inch pan.
- While the bars are still warm, sprinkle the chopped chocolate on top.
- Lightly press the chocolate into the graham cracker mixture with wet or greased hands.
- Refrigerate for at least 30 minutes.
- Cut the dessert into 16 bars using a sharp knife and serve.
- Refrigerate any leftovers in an airtight container.

Go Gluten Free: You simply need gluten-free, dairy-free graham crackers. I like Kinnikinnick and have heard great things about Partake Graham Crackers. Please use caution when selecting gluten-free graham crackers as some brands do contain milk.
Make it Vegan: Substitute vegan marshmallows (gelatin-free) for the marshmallows. I’ve often used Dandies. If strictly vegan, you will also need to seek out vegan graham crackers. A key ingredient in traditional graham crackers is honey. Some generic brands are made without honey, and so are some special diet brands, like Partake and Kinnikinnick Vegan.
