    These healthy no bake chocolate treats are one of my favorite types of recipes. They’re nutritious enough to enjoy midday as a snack, they use everyday dairy-free ingredients, they are perfect with afternoon tea or coffee, and they are tasty enough to call dessert!

    This recipe was originally shared with us by culinary nutrition expert Jessica Mitton. It was as a sample from her dairy-free, gluten-free cookbook Some Good Sweet Treats.

    Why You’ll Love these Healthy No Bake Chocolate Treats

    • Fudgy & Chewy: These bites combine the creamy richness of fudge with ample nuts, coconut, and oats.
    • Packed with Energy: The ingredients contribute protein, healthy fats, fiber, and a small dose of sugar for satisfying sustenance.
    • Fast & Easy: Melt, stir, and chill – that’s it! There’s no baking or fuss needed.
    • Special Diet Friendly: Of course they’re dairy-free, but these squares are also vegan, gluten-free, and can easily be made top allergen free or paleo.
    • Versatile: You can mix up the add-ins based on what you have on hand. I’ve included some suggestions below!

    Other Recipe Options

    • Peanut Butter: Sub it for the almond butter for a Reese’s vibe. You can even add chopped peanuts instead of walnuts.
    • Coconut Forward: Go grain-free, and substitute more coconut for the oats. Add a little coconut extract (start with 1/2 teaspoon).
    • Dubai: Use pistachios instead of walnuts and pumpkin seeds and sub kataifi (shredded phyllo dough) for the coconut. You can even use cashew butter or pistachio butter instead of almond butter to create more pistachio emphasis.

    Recipe FAQs

    • Can I make these in the Microwave? You can! Gently melt the almond butter, maple syrup, and coconut oil together in a microwave-safe bowl. I would use 15 second intervals. It should be relatively hot, but not very hot or scorched.
    • Is Chocolate Dairy Free? Real dark and semisweet chocolate should be dairy free, but many brands like to add milk ingredients. We use Enjoy Life Chocolate Chips (semisweet or dark – you choose!) for recipes like this one. They are made without top allergens and are even soy-free.
    • Should I use Sweetened or Unsweetened Coconut? We used unsweetened shredded coconut. If you want sweeter, chewier no bake chocolate treats, you can use sweetened shredded coconut.

    These tasty squares are fast, easy, and filled with superfood goodness! Each chocolaty bite is packed with walnuts, pumpkin seeds, coconut, and oats for great texture, a dose of fiber and healthy fats, and a sweet that truly satisfies.

    Ingredients Method Nutrition Notes

    Ingredients
      

    • 1 cup almond butter (can sub sunflower seed butter for nut-free)
    • ½ cup maple syrup
    • ½ cup coconut oil
    • 1½ cups dairy-free chocolate chips
    • 1 teaspoon vanilla extract
    • 1 cup shredded coconut
    • 1 cup raw walnuts chopped (sub sunflower seeds or more pumpkin seeds or oats for nut-free)
    • 1 cup raw pumpkin seeds
    • 1 cup quick oats

    Method
     

    1. Place a piece of parchment paper in an 8x8-inch baking dish.
    2. Put the almond butter, maple syrup, and coconut oil in a saucepan over medium-low heat. Stir constantly, until the mixture is melted and fully combined.
    3. Remove the pan from the heat and add the chocolate chips and vanilla. Stir until the chocolate is melted and fully combined.
    4. Stir in the coconut, walnuts, pumpkin seeds, and oats until evenly distributed.
    5. Transfer the mixture to your prepared baking dish and even it out.
    6. Refrigerate or freeze the chocolate mixture until it is firm.
    7. Remove the chilled mixture from baking dish by lifting the parchment paper. Place it on a cutting board and cut equally into sixths each way to create 36 squares.
    8. Store these sweet vegan squares in an airtight container in the refrigerator for up to 1 week, or freeze them for up to 3 months.

      Does this recipe really get that brown colour and a chocolatey flavour without any cocoa powder?
