When Enjoy Life Foods asked us to make a new dip recipe for their crunchy Lentil Chips, I immediately thought of dairy-free dill pickle dip. Tangy, creamy, and right on trend, I knew it would easily satisfy everyone’s cravings. I asked my friend Hannah to help me photograph the recipe, but we couldn’t agree on how to make it. I wanted quick and nostalgic, but she had her heart set on a from-scratch formula. Not wanting to let me down, she whipped up both for the pictures! Dairy-Free Dill Pickle Dip with Allergy-Friendly Lentil Chips

What Is Pickle Juice?
It’s the brine in your jar of dill pickles. Depending on the pickle size and recipe version that you choose, expect to use 2 to 4 pickles pickles in this dip. Once you remove those pickles, you should have plenty of excess pickle juice / pickle brine, to drain off and use in this recipe.
What Is Neutral Tasting Oil? Can I Use Coconut Oil?
It’s your everyday cooking or baking oil that doesn’t have a pronounced flavor. Grapeseed oil, sunflower oil, and safflower oil are great examples of neutral tasting oils. Options like avocado oil and coconut oil have a more pronounced flavor that can affect the overall taste of the dip. Refined coconut oil has a more neutral taste, but it can cause the dip to set up differently.

Which Recipe Version Do You Recommend?
They are both delicious, so it’s hard to choose! It really depends on what you’re craving, how fast you need it, and what ingredients you have on hand. The quick no-cook version, made with dairy free cream cheese, has more of that nostalgic taste and classic creamy consistency. It has a contrasting white color and gentle twang that only cream cheese can offer. But the whole food version has a surprisingly satisfying and clean flavor with a rich velvety texture. It’s also a little heftier in nutrition, and is easily justifiable as an any time snack dip with veggies and lentil chips.

Dairy-Free Dill Pickle Dip

Method
- Put the cream cheese alternative in a medium mixing bowl or the bowl of your stand mixer. Beat with a hand mixer for your stand mixer until softened. Slowly drizzle in the pickle juice while mixing, until it reaches your desired dipping consistency.
- Season the dip with black pepper. Fold in the pickles and fresh dill.
- If you have time, refrigerate the dill pickle dip for 1 hour or more. This will allow time for the flavors meld.
- Put the potatoes in a small saucepan. Add cold water to cover, then place the pan over medium heat. Bring the water to a boil, and then reduce the heat to medium-low. Simmer the potatoes for 10 to 12 minutes, or until they are fork-tender. Drain thoroughly and let cool.
- Transfer the cooked and cooled potatoes to your blender or food processor. Add the olive oil, 2 tablespoons pickle juice, onion powder, garlic powder, and black pepper. Blend until completely smooth, pausing to scrape down the sides of the canister as needed. Drizzle in the remaining 1 tablespoon pickle juice to thin the dip, if needed.
- Transfer the mixture to a large bowl. Fold in the chopped pickles and fresh dill. Taste, and add more seasoning, if desired.
- If you have time, refrigerate the dill pickle dip for 1 hour or more. This will allow time for the flavors meld.
- Transfer your dairy free dill pickle dip of choice to a serving bowl. Serve with dairy-free chips, crackers, vegetables, etc.
- Store any leftover dip in an airtight container in the refrigerator for up to 3 to 5 days.
