    Move over orange, we’re mixing things up with these dairy-free cherry creamsicles. The recipe is adapted from the book Rocket Fuel: Power-Packed Food for Sports and Adventure by registered dietitian Matt Kadey. His recipes aren’t all dairy-free, so we had to make a few changes, but we think our swaps are equally delicious.

    Though the recipe has minimal ingredients, we do have a few options to help you adapt these dairy-free cherry creamsicles to taste!

    • Cherry Juice Options: Matt uses potent tart cherry juice, which can replenish and aid muscle recovery after activities. But all types of cherries and cherry juice are rich in antioxidants and have additional health benefits. So don’t feel like you’re cheating if your choose a sweeter type! As noted in the recipe, you can substitute pureed cherries. Sweet black cherries are readily available frozen if you prefer to use the whole fruit, but fresh cherries aren’t readily available.
    • Froyo Pops Option: Matt’s original recipe is more of a frozen yogurt pop. He uses all Greek yogurt rather than the blend of dairy-free yogurt and coconut milk we use. If you have a thick, rich dairy-free yogurt, you can use all yogurt (1 1/4 cups) and skip the coconut milk.
    • Other Fruit Options: These healthy creamsicles would also be delicious with pomegranate juice, blueberry juice, or pureed blueberries.

    Special Diet Notes: Cherry Creamsicles

    By ingredients, this recipe is dairy-free / non-dairy, egg-free, gluten-free, grain-free, nut-free, peanut-free, optionally soy-free, optionally vegan, plant-based, vegetarian, optionally paleo, and top food allergy-friendly. Just be sure to choose the yogurt alternative and sweetener that suit your dietary needs.

    These cool yet creamy treats are filled with nutrition. Use tart cherry juice if you want more antioxidants and a sweet-tart taste.

    Ingredients
      

    • ¾ cup plain or vanilla dairy-free yogurt
    • ½ cup full-fat canned coconut milk or coconut cream
    • 2 tablespoons honey (sub agave nectar for vegan)
    • 1 lime juice and zest
    • 1 ¼ cups cherry juice see Cherry Juice Options below

    Method
     

    1. In your blender, puree the yogurt alternative, coconut cream, honey, and lime zest until smooth.
    2. In a glass measuring cup, stir together the cherry juice and lime juice.
    3. Pour alternate layers of the yogurt and cherry mixtures into each well of a popsicle mold.
    4. Insert sticks into the molds and freeze until solid, about 6 hours.
    5. To unmold pops, run mold under warm water for a few seconds, being careful not to thaw the pops. Store in the freezer for up to 2 months.

    Notes

    Cherry Juice Options and Alternatives: The original recipe uses Montmorency tart cherry juice. If you want sweeter popsicles, use black cherry juice. Alternatively, you can puree fresh, pitted cherries and use the puree in place of the juice.
