    It’s important to know how to caramelize onions the right way to get the most flavor in you dairy-free onion dip. Here are a few quick tips:

    • Cut evenly. They don’t need to be exact, but it’s best to slice the onions uniformly for even cooking.
    • Resist stirring too much. After the initial saute, the onions need some time on the pan to brown and caramelize. Stir periodically for equal browning, but not continuously. 
    • Don’t rush it! Low and slow is the best way to caramelize onions.
    • Water is okay. It’s tempting to add more oil, but that can result in greasy onions. If they start to stick, reduce the heat and add a splash of water or broth.

    Can You Taste the Cauliflower?

    Don’t worry, this allergy-friendly caramelized onion dip does NOT taste like cauliflower. It might actually win over some cauliflower haters or skeptics. But if you are still concerned about picky eaters, go ahead and add an extra onion when caramelizing to really emphasize that flavor.

    Is there a Good Substitute for the Nutritional Yeast?

    This is a tough ingredient to substitute since it’s quite unique. If you think you don’t like nutritional yeast, it might be because a recipe you tried called for too much. Nutritional yeast should be used like a seasoning, not a base ingredient. This entire recipe uses just 2 tablespoons, and it enhances the flavor nicely. If your diet permits it, I do recommend buying some to have on hand. It lasts for quite a while in the pantry, and you usually only need a little at a time. But if preferred, you can substitute store-bought dairy-free parmesan or 1/2 to 1 teaspoon of miso for a different umami twist.

    What Can I Use instead of Apple Cider Vinegar?

    Rice vinegar is a good substitute for apple cider vinegar in this dairy-free caramelized onion dip. White vinegar could work, but it is a little harsh in flavor. In a pinch, you could substitute lemon juice. We haven’t tried balsamic vinegar in this dip, but that could be a tasty option in its own right!

    What Type of Milk Alternative Do You Recommend?

    For most recipes, I use unsweetened dairy-free coconut milk beverage, like So Delicious. But your favorite type should work fine in this recipe since you only need a little bit. You can keep it coconut-free with other types, like oat milk or rice milk! For a richer finish, you could use a plain unsweetened dairy-free creamer or heavy cream alternative.

    Dairy-Free Caramelized Onion Dip

    Caramelized onions are the secret to this rich, savory, and irresistible dip. No one would guess that it’s made with a cauliflower base rather than dairy, cashews, or tofu! It fits nearly any special diet or theme. And like any good party guest, it can quickly turn strangers into friends.

    Ingredients
      

    • 3 tablespoons olive oil
    • 2 medium yellow onions minced
    • 1 pound cauliflower florets fresh or frozen
    • 2 tablespoons nutritional yeast
    • 1 tablespoon apple cider vinegar
    • 1 teaspoon onion powder
    • ½ teaspoon garlic powder
    • ¼ teaspoon cayenne pepper (optional)
    • ½ teaspoon salt
    • 1 to 3 tablespoons plain unsweetened dairy-free milk beverage as needed
    • 3 to 4 tablespoons fresh chives or scallions thinly sliced

    Method
     

    1. Heat the oil in a small saucepan over medium-high heat until shimmering. Add the onions and sauté for about 5 minutes, until translucent. Turn down the heat to medium-low and continue to cook, stirring periodically, for 40 to 45 minutes. You’ll want to stir more frequently towards the end of the cooking time to prevent the onions from sticking and burning. Gradually, the color will darken to a rich amber brown. Remove from the heat and let cool.
    2. Meanwhile, steam the cauliflower until very soft and fork-tender.
    3. Place the cauliflower in your food processor or high power blender with the nutritional yeast, vinegar, onion powder, garlic powder, cayenne (if using,) and salt. Pulse to combine, pausing to scrape down the sides of the bowl with your spatula as needed.
    4. With the motor running, slowly stream in the milk beverage until it reaches your desired consistency. Continue blending until completely smooth, about 5 to 8 minutes.
    5. Use a spatula to fold in the caramelized onions and about half of the chives or scallions.
    6. Transfer the dip a bowl and top with the remaining chives or scallions.
    7. Serve the dip with kettle chips, crackers, baguette, or crudité. You can enjoy it right away, warm, or cover and refrigerate the dip for at least one hour to serve chilled.
    8. Store any leftover dip in an airtight container in your refrigerator for up to 3 to 5 days.

      I’m sorry, I thought this sounded great, I like all the ingredients but this is disgusting. Are you sure you didn’t leave some major ingredient out? I read back over the recipe multiple times to see what I had done wrong but I followed it exactly. It never gets creamy. I had to add over 1/2 a cup of almond milk just to get it like coarse mashed potatoes. It tastes like cauliflower mashed potatoes. I tried to doctor it with more of the spices but nothing helped. It went in the trash. Sorry for the bad review but this is sooo bad. I blended it in my ninja until the motor was getting hot, let it cool and did it again several times.

        I’m so sorry for all of the difficulty you had with this recipe Tom! It sounds like the cauliflower wasn’t cooked enough. It should be quite soft. I’ve updated the wording to ensure it is clear. If it isn’t soft, the fibrousness of the cauliflower will prevent proper blending. Adding more milk alternative then makes it more like mashed potatoes. It’s important to avoid adding too much. If you don’t think this was the issue, let me know so we can troubleshoot it and ensure it is a great recipe!
