- Preheat the oven to 375ºF.
- In a large bowl, combine the meat, carrots, potato flakes or oats, coconut milk, eggs, cilantro, scallions, sesame oil, chili sauce, ginger, and salt.
- Transfer the mixture to a loaf pan and even it out.
- Bake the meatloaf for about 1 hour, or until the meatloaf reaches an internal temperature of 145ºF for beef or 160ºF for turkey. A turkey version might take 15 minutes longer.
- Let the loaf rest just a few minutes before slicing.
