    I had some Granny Smith apples that were on their last legs, so I pulled out this favorite recipe for dairy-free apple cinnamon baked oatmeal. It’s one we love during the holiday season – when you’re craving sweet fall and winter flavors, but you need something healthy. The recipe is easy to throw together, and makes a moist, flavorful breakfast or afternoon treat that satisfies in every way.

    Can I Freeze this Recipe?

    Yes, it freezes well! I prefer to bake it and then freeze. You can freeze it whole or in individual portions. Reheat in the oven or microwave for a convenient breakfast option.

    How Many Apples Do I Need?

    One large apple, two medium apples, or three smaller apples will likely yield enough diced apples.

    What Type of Apples Should I Use?

    Stick with apples that don’t get mushy when baked. We like Golden Delicious, Braeburn, Honeycrisp, Opal, Granny Smith, and Fuji. But any good pie apples will come out nicely.

    How Can I Make it Sliceable?

    If you are okay with eggs, you can add 1 egg. You’ll want to whisk the egg into the milk and sugar mixture until fully combined before heating it. In general, it is firmer when cold, especially if you use coconut oil.

    Can I Use a Different Size Pan?

    An 8×11-inch pan will be equivalent in size. If you only have an 8×8-inch pan, that should work fine, too. It will just be a little thicker, but should still bake through nicely.

    This is a moist, spoon-able baked oatmeal that you can simply enjoy by the spoonful, or doused with your favorite milk alternative.

    Ingredients
      

    • 1 ½ cups old-fashioned rolled oats (certified gluten free, if needed)
    • 1 ½ to 2 cups diced apples optionally peeled
    • ½ cup dried cranberries, raisins, blueberries, or a combo
    • ½ cup chopped walnuts or pecans (omit for nut-free)
    • 3 cups unsweetened dairy-free milk alternative (use plain or vanilla for a sweeter result)
    • 6 tablespoons packed brown sugar or coconut sugar
    • 1 ½ tablespoons coconut oil (can substitute dairy-free buttery spread)
    • 1 ½ teaspoons ground cinnamon
    • ¼ teaspoon salt

    Method
     

    1. Preheat your oven to 350ºF and grease a 9x9-inch baking dish.
    2. Place the oats, apples, dried fruit, and nuts (if using) in your prepared baking dish and stir to combine. Even the mixture out in the pan.
    3. Add the milk beverage, sugar, oil, cinnamon, and salt to a medium saucepan over medium heat. Heat, while whisking, until the sugar is dissolved and the mixture is hot (steaming) but not yet boiling.
    4. Pour the milk beverage mixture slowly and evenly over the oat mixture in your baking dish.
    5. Bake uncovered for 30 to 40 minutes, or until the liquid has been absorbed and the oatmeal is tender.
    6. Let the apple cinnamon baked oatmeal cool for 10 minutes before serving, or cool it completely, cover, and store in the refrigerator for up to 3 days. It will firm up a little as it chills.

      Can you omit the coconut oil to make this work for an oil-free plant based diet? Or is there something you can substitute for it?

        I don’t personally recommend it, but if you are used to the taste / texture of fat-free goods then you can substitute it with something else.

      Looks scrumptious and a perfect use for our apples we picked/pick. I usually make an apple bake or two, some like this, was debating on an oatmeal one or more of a bread pudding this year, I’m sure I have time for both!

      I know most people might think of this as a delicious breakfast, but I think it would also make an amazing dessert fresh out of the oven and topped with coconut milk vanilla ice cream. Yum!

        I like to freeze portions for quick breakfasts….but, you have said this recipe turns out loose, more scoopable then slicing pieces. If I add an egg will that firm it up a bit?
