    This recipe for crustless sweet potato pie is a healthy “dessert” entry in the So Delicious Dairy Free 3-Course Recipe Contest, submitted by reader Fraidy Levilev. Fraida says, “It’s more of a side dish to go with a main dish.” But she entered it as a dessert! We think this crustless sweet potato pie (filling, really) could easily go over as a healthy treat.

    Ingredients Method

    Ingredients
      

    • 3 sweet potatoes baked
    • 1 egg
    • ¼ cup almond milk
    • 2 tablespoons raw cane sugar
    • 1 teaspoon cinnamon
    • Garnish: dates pecans

    Method
     

    1. Preheat oven to 375°F
    2. Mix all ingredients until well combined.
    3. Place in 3 small pans or 1 medium sized round pan.
    4. Garnish with dates (pit removed) with a pecan placed inside.
    5. Bake for about an hour or until firm on top.
