    Bloody Good Pineapple Punch: A Bubbling Brew for All Ages

    This really is a bloody good pineapple punch. It’s made with fresh pineapple, infused with ginger, sweetened with honey (or agave nectar for vegan), and spiked with seltzer. As is, it’s quite delicious, but the Halloween-worthy “blood” adds a frightfully delicious touch. It’s a simple, concentrated cranberry syrup that submerges as it drips into the drink. The natural flavors combine to create a wonderful sweet-tart taste that kids and adults can enjoy.

    This Bloody Good Pineapple Punch is a Bubbling Brew for All Ages

    Fruits and vegetables don’t have to be scary, but sometimes it’s fun if they are! Once you’ve made the fresh pineapple punch below, you can turn the pineapple shell into a tiki-style jack-o-lantern for a no-waste recipe.

    Tiki Pineapple Jack-o-Lantern

    1. Cut the top off a Dole pineapple, but keep it.
    2. Remove the fruit from the inside, keeping the shell in tact. Dice the fruit and use it in the pineapple punch recipe below.
    3. Cut a classic jack-o’-lantern face into once side of the hollowed out pineapple shell.
    4. Place a votive candle inside, replace the leafy top and use for a table decoration.

    This bubbling brew is a healthy, sweet drink that everyone can enjoy for Halloween! Of course, you can skip the cranberry "blood" if you just want a delicious sparkling fresh pineapple-ginger drink. Please note that the Prep time is hands-on time only. You might need a little extra time to let the honey syrup and cranberry "blood" cool. Both can be made ahead.

    Ingredients Method Nutrition Notes

    Ingredients
      

    • ½ cup honey or agave nectar
    • ½ cup water
    • 2 2-inch pieces fresh ginger sliced
    • 3 cups diced pineapple
    • 6 cups ice cubes
    • 1 liter plain seltzer water
    • Cranberry “Blood” (recipe below)

    Method
     

    1. In a small saucepan, stir together the honey, water, and ginger. Heat the mixture until the honey melts without bringing it to a boil.
    2. Remove the saucepan from the heat, and let the honey-ginger mixture cool completely. Remove the ginger.
    3. Add the pineapple to your food processor or blender, and pour in the honey-ginger mixture. Blend until smooth.
    4. Fill six tall glasses with ice cubes. Divide the pineapple mixture between glasses, about 2/3 cup in each. Pour in 2/3 cup seltzer and stir.
    5. Dot some Cranberry “Blood” in several spots along inner edge of the glasses, making sure the “blood” touches glass. The “blood” will swirl as it falls to the bottom of the glass!

    Notes

    Cranberry “Blood”: Choose frozen cranberry concentrate without corn syrup. In a small saucepan, simmer 1/2 cup thawed cranberry concentrate until reduced by half, about 4 or 5 minutes. Cool to room temperature. If Cranberry “Blood” is made ahead, refrigerate and then bring to room temperature before adding it to the drinks.
